Gluten, Dairy, and Sugar Free Recipes

Pizza
There are lots of mixes for pizza dough that are available at stores. I personally think they are dry, though love them when I have to get my bread fix. I prefer to fill green peppers with all my pizza fillings and bake in the oven for 10 min. Also fun to slice zucchini and pile the fillings on that.
Whatever you choose as your vege base, just bake at 350 for 10 min.
I will post a cauliflower crust recipe later if I find it worthy. :) Gotta try it first.

Chocolate Chips

1 cup coconut oil
1 cup cocoa
3 tbsp raw honey
1 tsp vanilla

Mix coconut oil, cocoa, and raw honey and heat over low heat. Once blended remove from heat and stir in vanilla. Line bowl with wax paper, pour into bowl, cover, and place in freezer 1 hour. Remove and chop into chips. Store in refrigerator until ready to use.

Homemade Peanut Butter Cups

3 tbsp Coconut Oil (you can also use butter instead)
3 Tbsp Raw Honey (Maple Syrup or Agave taste great too)
3 oz Baking Chocolate (Feel free to use 3 1/2 tbsp cocoa powder instead)

1/4 cup peanut butter (you can also use cashew butter or almond butter)

Melt over very low heat, stirring constantly. Fill mini cup cake liners 1/4 of the way with chocolate mixture. Place them in freezer for 15 to 20 min. They don't have to be solid, just hard enough to hold the peanut butter on top.
Now fill with peanut butter 1/2 to 3/4 full depending on how much you love peanut butter. :)
Pour remaining chocolate to cover peanut butter.
Freeze until cups are firm. At least 30 min... if you can wait.
